🌿 Brief Background

During harvest, a meticulous selection process occurs where only ripe coffee cherries are picked. A thorough washing and floating process is employed to separate coffee beans from unwanted impurities and defective beans. A pulping method, without the use of water, is utilised to remove the outer skin of cherries. The fermentation process is carried out for about 18 hours and is closely monitored to maintain a maximum temperature of 14°C. The washing process starts only after 6pm, taking advantage of the cooler temperature that contributes to a gradual and controlled fermentation. To promote even drying of the coffees, a slow-drying process is implemented, and the coffees are dried for approximately up to 10 days. Lastly, the coffee is threshed, classified, and packed to be ready for export.

    Raw coffee: Airtight not required. Shelf life up to 24 months
    Roasted coffee: Airtight recommended. Shelf life 3 – 6 months

    DO NOT REFRIGERATE OR FREEZE - ODORS AND MOISTURE CAN DAMAGE FLAVOR.
