Brief Information

Quedraditas Coffee Farm is located in Colombia's Central Mountain range at 1600 - 1850 meters above sea level. During the harvesting process, at least 90% of the picked coffee cherries are fully ripe. The harvested cherries undergo flotation to remove the green, overripe, and dry cherries, ensuring only the highest quality cherries are processed further. Next, oxidation is conducted in food-grade plastic drums for 16 hours. Subsequently, to remove the mucilage, the cherries are pulped dry, and another round of oxidation occurs post-pulping for 24 hours. Followed by a washing stage that is conducted at 45 celsius, creating a thermal shock to enhance processing. 

🥭 Passionfruit 🥭 

For the maceration, pulp from Geisha, Sidra, and Pink Bourbon varieties is used as a starter culture, which is inoculated with Hybrid Saccharomyces cerevisiae x Saccharomyces bayanus yeast. Passionfruit is added to the starter culture for this particular coffee. The fermentation process lasts for 36 hours at a controlled temperature below 25 Celsius, utilising specific Drying follows, lasting 76 hours but at an average temperature of 40 celsius to ensure optimal moisture content. Finally, the coffee is stabilised in hermetic bags to preserve the quality.

    Raw coffee: Airtight not required. Shelf life up to 24 months
    Roasted coffee: Airtight recommended. Shelf life 3 – 6 months

    DO NOT REFRIGERATE OR FREEZE - ODORS AND MOISTURE CAN DAMAGE FLAVOR.
